Quinoa Salad

Quinoa is rising in popularity in the health community. Bebe breaks down the mystery and shows us a simple quinoa salad recipe.

Ingredients

  1. 1 cup finely chopped celery
  2. 1 cup finely chopped parsley
  3. 1 large red pepper diced
  4. 1/3 cup capers
  5. 1 can rinsed black beans
  6. 1 diced Royal gala Apple (put a little lemon juice over it to stop it turning brown)
  7. 1 cup quinoa
  8. Salt, pepper, olive oil, lemon to taste

Directions

  1. Mix all the ingredients together except the quinoa
  2. Rinse and drain the quinoa
  3. For every cup of quinoa, you need to add 2 1/2 cups water
  4. Put 2 1/2 cups of water in a pan
  5. Add the quinoa
  6. Add 2 tsp of oil
  7. Add a pinch of salt and stir
  8. Put the lid on and put the fire on high (usually takes about 20 minutes to cook)
  9. When the water is boiling turn to a low heat (all the water will be absorbed by the quinoa)
  10. When the quinoa is cooled fluff it up with a fork
  11. Add the quinoa to the rest of the salad
  12. Add olive oil, lemon juice, salt and pepper according to taste and mix well
