A true "veggie" quesadilla. Packed with a variety of vegetables and beans.

Ingredients

For the subzi

  • 1 cup tomatoes
  • 1 cup corn
  • 1 cup zucchini
  • 1 cup carrots
  • 1 cup yellow squash
  • 1 cup red pepper
  • 1 cup yellow pepper
  • 1 cup green pepper

For the beans

  • 1 can large kidney beans
  • ½ cup mixed peppers, green, red, yellow
  • ½ cup tomato sauce
  • 1 teaspoon oregano
  • 2 teaspoon olive oil
  • Salt and pepper
  • Cheese
  • Flour tortillas

Method

  1. In a pan add the olive oil, oregano and black pepper
  2. Then add the mixed peppers
  3. Add the tomato sauce and a pinch of salt
  4. Add the can of kidney beans
  5. Mix thoroughly for 5 minutes, remove from heat
  6. In a pan add the olive oil, oregano and black pepper
  7. Add the green peppers, red peppers and yellow peppers, yellow {For the subzi} squash, corn, carrots and zucchini
  8. Add 1 tsp salt
  9. Cover for 10 minutes
  10. After 10 minutes add the tomatoes and leave until the water is all evaporated
  11. Take a tortilla and spread the bean mixture on it
  12. Then take some of the vegetable subzi and spread on the tortilla
  13. Sprinkle some cheese over it
  14. Cover with another tortilla
  15. Spread a little butter on both sides
  16. Place in a press for two minutes
  17. Eat with sour cream, salsa or guacamole
