This refreshing and cool Thai salad is wonderful as a side dish or an entire meal. Bebe shows us how easy it is to make.

Ingredients

  • 1 Large diced red pepper
  • 1 Large diced tomato
    • 1 cup thickly striped cabbage
    • 1 finely diced green chilli (without the seeds)
      • cup chopped green beans
      • 1 cup freshly chopped cilantro/ parsley
        • 2 small limes
        • Chilli Paste (to taste)
          • Soy Sauce (to taste)
          • cup toasted peanuts
            • 227 grams Rice Noodles (cooked)
            • Ginger powder (to taste)
              • 1 teaspoon Honey
              • 1 teaspoon Mustard
                • Pinch of Hing

Method

  1. In a bowl, add the green chilli, red pepper, tomato, cabbage, cilantro and rice noodles (tip: cut the noodles using a clean kitchen scissors into small strips for an easy mixture).
  2. Mix the above ingredients gently and add some soy sauce and mix it again.
  3. In a heated frying pan, add some oil, pinch of hing, green beans, honey, mustard and ginger powder. Mix the ingredients and let it cook for 2 mintues.
  4. Add the cooked beans, toasted peanuts and 2 small lime juices to the salad. Mix the salad using a salad fork until all the ingredients are mixed well.
  5. Lastly, add chilli paste (to taste) and soy sauce (to taste), stir the mixture and serve.
