This quick and easy vegan pasta dish was a special request. Hope all who watch and make it, enjoy it as much as we did. Here's to comfort food pasta!

Ingredients

  • 250 grams or ½ lb dry penne pasta
  • 1 tablespoon olive oil
    • red chilli flakes to taste
    • 1 teaspoon salt
      • 8 ounces of diced tofu cutlets
      • 1/2 cup fresh basil leaves
        • 1/3 cup fresh parsley
        • 4 large diced red tomatoes
          • 1 cup chopped green cabbage
          • 1 diced green bell pepper
            • 4 cups chopped spinach leaves
            • 1 teaspoon dried oregano

Method

  1. In a large pan, heat 2 litres of water, add olive oil and salt.
  2. Cook pasta for 20 mins. Drain and reserve 1 cup of pasta liquid.
  3. In a thick bottom pan heat oil, add red chilli flakes, cabbage, green bell pepper, diced tofu, tomatoes.
  4. Sauté for a few minutes and finally add oregano, salt, parsley, cover pan and cook for 5 to 8 mins.
  5. Add spinach and let it wilt. Add pasta, basil and the reserve liquid.
  6. Cook for a further two mins. Serve hot or cold.
