Ingredients

  • 1 packet Pasta
  • 2 cups mixed cheese
    • 1 cup chopped carrots
    • 1 cup chopped zucchini
      • 1 cup yellow squash
      • 1 1/2 cup mixed peppers, red, yellow, green
        • 1 cup diced fresh tomatoes
        • 1 head of broccoli
          • 1 can crushed tomatoes
          • 1 cup parsley
            • 2 tablespoon dried oregano
            • 1/2 cup fresh basil
              • 1 teaspoon dried oregano
              • 4 tablespoon olive oil

Method

  1. In a pan put 4 tbsp olive oil, heat the oil
  2. Add 1 tsp dried oregano and 1/2 tsp black pepper
  3. Add the yellow squash, carrots, zucchini and broccoli
  4. Mix together and add 2 tsp salt
  5. Keep mixing and cook for about 5 minutes
  6. Add the can of crushed tomatoes and fresh diced tomatoes
  7. Mix together and leave on low heat for 5 minutes
  8. Take off the heat and put in a bowl
  9. Add the pasta, mixed peppers, parsley, basil and fresh oregano to the vegetables and mix well together
  10. Transfer to a baking dish
  11. Drizzle a little olive oil over the top
  12. Sprinkle the cheese on top
  13. Bake for 15 minutes at 400 degrees
