Irish Soda Bread

Happy St. Patrick's Day! This golden crusted bread with a moist inside is wonderful. Never cared for Irish Soda Bread till I tried this one. You would never know it is vegan - it is so tender inside.

  1. ¼ cup vegan butter
  2. 1/3 cup sugar
  3. 3 cups flour
  4. 1 ½ teaspoon baking powder
  5. 1 teaspoon baking soda
  6. ½ teaspoon salt
  7. 2 teaspoon caraway
  8. 1 cup soy yogurt
  9. 1/3 cup soy milk
  10. 1 tablespoon vinegar
  11. ¾ cup raisin
  12. 1 tablespoon packed light brown sugar


  1. Pre-heat the oven to 350 degrees farenheit
  2. Mix together the butter and sugar
  3. Sieve 3 cups of flour, baking powder, baking soda, salt
  4. Mix the sieved ingredients with the butter and sugar with a hand blender
  5. Make sure there are no big lumps in it
  6. Add 2 tsp caraway seeds and mix
  7. In a bowl mix together 1 cup soy yogurt, 1/3 cup soy milk, 1 tbsp vinegar
  8. Make a well in the middle of the dry ingredients and add the wet ingredients
  9. First mix together with a spatula then a hand mixure, it should form into a sticky wet dough
  10. In a bowl add ¾ cup of raisins and a tbsp. flour and coat the raisins.
  11. Fold the raisins into the dough
  12. Flour a work surface, transfer the dough and knead for 4-5 minutes
  13. Make a ball and sprinkle 1 tbsp packed light brown sugar
  14. Transfer the dough to a baking sheet and make a cross of the top of the dough with a knife
  15. Bake in a preheated oven at 350 degrees for 50 minutes
