Mango Muffins

A delicious tropical vegan muffin. The taste of mango and cardamon, make this muffin melt in your mouth.

Ingredients

  1. 2 cups all-purpose flour
  2. ½ cup oil
  3. 1 cup sugar
  4. 1 ½ cup chopped mangoes
  5. 1 cup pureed mangoes
  6. ½ teaspoon cardamom
  7. 1 teaspoon baking powder
  8. ½ teaspoon baking soda
  9. ½ teaspoon salt

Cardamom sugar topping

  1. 2-3 tablespoon sugar
  2. ½ teaspoon cardamom
  3. 1 tablespoon all-purpose flour

Directions

  1. Sieve the all-purpose flour, baking soda, baking powder, ½ tsp salt and ½ tsp cardamom
  2. Pre heat the oven to 375 degrees F
  3. In another bowl add ½ cup oil, sugar, mango puree and mix together
  4. Add the dry ingredients and mix
  5. Add the chopped mango and fold in
  6. Spray your muffin cases with oil
  7. Take a scoop of mixture and put in the cases
  8. Put the cardamom topping on each of the muffins
  9. Now bake them for 25-30 minutes
