  1. 1 tablespoon molasses
  2. 1 tablespoon lemon juice
  3. 1 teaspoon orange rind, grated
  4. 125 millilitres vegetable oil
  5. 300 millilitres soya milk
  6. 250 grams currants
  7. 250 grams sultanas
  8. 125 grams seeded raisins
  9. 375 grams wholemeal flour
  10. 1 teaspoon baking powder
  11. 1 teaspoon mixed spice
  12. chopped nuts and marzipan for decoration (optional)


  1. Mix the molasses, lemon juice, orange rind, oil, soya milk and fruit together thoroughly. Sift the flour, baking powder and mixed spice together and stir into the fruit mixture. Turn into a 20cm (8 in) non-stick cake tin.
  2. Bake at 150C/300F/Gas Mark 2 for 2 hours. Cover with greaseproof paper and bake at 120C/250F/Gas Mark ½ for another hour or until a skewer inserted into the cake comes out clean and dry. Decorate with nuts, if desired, or cover with marzipan after baking.
