Butternut Squash Lentil Soup

  1. a small butternut or half if large - peeled and diced
  2. 1 tablespoon oil
  3. 1/3 cup white cabbage
  4. 3/4 cup red lentils
  5. 1/3 cup parsley
  6. 1 teaspoon thyme
  7. 1 teaspoon salt
  8. 1/4 teaspoon black pepper
  9. pinch of cayenne (optional)
  10. 5 cups water
  11. 4 bay leaves


  1. Heat a heavy bottom pan
  2. Add oil, sauté cabbage, washed lentils, diced butternut, salt, thyme, black pepper, water
  3. Cover pan and cook for 30 minutes, stirring every 10 mins
  4. Cook until butternut squash is soft to touch
  5. Add parsley (reserve some for garnish) and remaining ingredients
  6. Place all the ingredients in a bowl and blend with a hand blender or pass through a sieve
  7. Garnish with cayenne and parsley
